After a long day at work, we all want a quick and easy dinner when we get home. We are often tired and many of us don’t even feel like moving, let alone, cooking!
One evening, on one of my Pinterest explorations, I ran across a pin that said, “Pioneer Woman says: Perfect Salmon EVERY time, here’s how: drizzle salmon filet with olive oil, sprinkle with salt and pepper, put it in a cold oven, then turn on the heat to 400 degrees. Twenty-five minutes later, the salmon is absolutely perfect. Tender, moist, flaky. A no-fail method! Excellent for impressing dinner guests.”

I decided to try it a couple months back and I have been making salmon the same way ever since!! It was delicious!

When I make this dish, I like to spray an 8 X 8 glass baking dish with extra virgin olive oil. I also use sea salt instead of regular table salt. I place scales side down and bake the fish for about 25-30 minutes for a pound of salmon. She was right…it is perfectly flaky and delicious every time! I will often pair this with a serving of basmati brown rice and steamed broccoli. It is also wonderful on top of a bed of spinach! Enjoy!!
