I found out this week that as a Wilson’s Fitness employee, I receive an additional 25% off at Laura Lee’s Healthy Plate, a little health food shop inside of my gym. I have always walked right by Laura Lee’s not giving it a second glace. Why? Well, I always assumed it was too expensive and that I could make the same types of items at home. After finding out that I would receive 25% off and knowing they carried my favorite protein powder, I thought it deserved a walk through!
After walking up to the protein powders, I ran into Laura Lee herself! She was very personable and friendly! After talking with her for a few minutes, it was easy to see she shared the same passion for healthy cooking! We discussed plant based protein powders and I discovered that she carried her own protein powder that was similar to Plant Fusion! I bought her vanilla flavor and I was very excited to try it! She handed me this flyer about her protein powder that included a recipe for Lemon Poppyseed Muffins.
This afternoon, I decided to try her recipe for Lemon Poppyseed Muffins and they were DELICIOUS! I just had to share it with the world! SO yummy!
With the ingredients I had on hand, it made about 18 muffins, making it about 160 calories a muffin with almost 5 grams of protein! I used a stevia/sugar baking blend and unsweetened vanilla almond milk.
Great job, Laura Lee! I can’t wait to come back and try something new!
